Asparagus-Arugula Salad with Dill Avocado Dressing

Directions:

  • To a bowl, toss the following in a little bit of olive oil, squeeze of lemon, salt and pepper, and chill in the fridge until you are ready to serve
  • 1 box of arugula - chop
  • 1 cup of peas
  • 3 radishes (sliced or diced) - you could use 1 beet if you prefer
  • pine nuts (a small handful or 1/8 cup)
  • Blanch 1-2 bunches of asparagus (boiling water for 1-2 min and then ice bath)
  • Then pat dry and chop into 1 inch pieces.
  • Add to other ingredients that were chilling in the fridge
  • When ready to serve, add the Dill-Avocado dressing and toss
