Crunchy Salad with Lemon Tahini or Avocado Dressing
Ingredients:
- The Base
- green cabbage / red cabbage (sometimes I find it chopped or use broccoli slaw, but fresh is best)
- shredded carrots (I buy them this way)
- kale (make sure it's chopped very small ; it needs to be massaged with dressing)
- Additions
- chickpeas (edamame or other bean if you like them better)
- seed (pumpkin or sunflower)
- a few dried cranberries or 1 chopped medjool date
Directions:
- Chop the ingredients well and mix with the lemon-tahini or avocado dressing
- Be creative - my salad is different every week depending on what I have in the house
Notes:
- Optional animal protein like shrimp, salmon, or chicken
